Yesterday's lunch was Greek lentil soup. It contained olive oil, chopped leeks, 1 chopped carrot, tomato paste, lentils, ground cloves, vegetable stock, chopped tomatoes, coriander, salt and pepper. Lentils are healthy little things, packed with proteins, vitamins and low GI. However, they must be cooked for quite a while to get really soft, the soup needed 1.5 hours. |
